Ok Liz & Louise I have to admit spaghetti squash is not a fave. This was the first time I tried it. It does taste like squash a bit bland and mooshy. But the strong flavours of pesto and feta made it pretty good. The kids thought it was ok but preferred normal spaghetti. Thing is it was very easy to grow. And I have not yet had success with pumpkin. But I think I would prefer pumpkin cos you can make pumpkin into delicious soup.
Lovely. Now I wish I had grown spaghetti squash this year. Last year I had nine fruits and only at about 3 while the others went to the compost. I agree it is a bit bland, and pesto is the thing that livens it up the best.
Now that could easily be a Recipe Card from a well-known supermarket! A nice simple, wholesome recipe, very nicely presented.

ReplyDeleteI did try to eat spaghetti squash once before , but I will try again with your recipe- pesto does make everything taste good.
